Why this shape

The body is ripstop polyester — the same crosshatch weave the kitchen uses on mise bags — so a splatter from the plancha beads off instead of soaking through, and the fabric does not tear when a corner catches on a pan handle. Cotton neck straps and nylon waist ties are chosen where the body is not: cotton against the nape where polyester would chafe over a long shift, and nylon at the waist where the apron gets tied and untied dozens of times a shift and the ties need to slide, not grab. At twenty-seven inches wide and thirty-five inches long, the bib covers the torso and the lap of most adult bodies without becoming a smock that gets in the way of plating.
