Why this shape

The 9701 is cut from medium-weight 100% cotton twill — the same dress-pant fabric chefs have worn for a century — so it breathes through a hot line the way a poly blend never does, and it shrinks predictably across a season of industrial washes instead of pilling into a cheap shine. The baggy/relaxed fit puts the inseam at 31–32 in (regular) and gives the crotch room to step high around a low line without splitting a seam, and the elastic waistband with an inner drawstring keeps the pant up through a twelve-hour shift without the slip a dress-pant waistband suffers when bent down into an oven. The four pockets — two side, two back patch — hold a wallet, a thermometer in its sheath, a sharpie, and a tasting spoon without swinging loose, and the crease-resistant finish means the pant comes off the dryer looking pressed, not slept-in.
