Why this shape
A cook who owns knives eventually has to move them, and a bag full of loose blades ruins edges and hands in the same trip. A roll gives each knife its own sleeve so nothing touches anything, then folds the whole set into a bundle that survives a bus. This one takes over eighteen pieces — twelve large knives plus four utensil slots and two cleaver pouches — which is a full working kit rather than a starter three. The removable shoulder strap is what makes that weight carryable.
