Why this shape

A chef spoon is already the thing a cook reaches for to stir and to taste; putting graduations inside the bowl means the same motion also measures. The deep bowl holds enough to baste and to move a sauce, and the markings sit on the inside wall where they stay readable with liquid in the spoon. Fewer utensils in the sink at the end of service is the actual benefit.

Good for
Seasoning as you go, portioning sauce, basting and tasting on the line.
Not for
Dry baking measures that need levelling — a flat-rimmed cup is more accurate for flour.
Care
Wash after each shift and dry the bowl so the engraved markings stay legible.
