Why this shape
A peeler is judged on one thing: how thin a strip it takes. A dull or badly-set blade digs in and carries away the layer just under the skin, which is where the flavour and most of the yield sit — peel five pounds of potatoes with a bad peeler and you have thrown away a portion. A sharp, smoothly-pivoting blade rides the surface instead of biting into it, which is faster and wastes less at the same time.
- Good for
- Potatoes, carrots, squash, apples and any high-volume peeling where yield matters.
- Not for
- Thick or knobbly skins like celeriac — that is knife work, and a peeler will fight you the whole way.
- Care
- Rinse straight after peeling so starch does not dry in the pivot, and dry it before it goes in the drawer.
