Why this shape
A flat rigid rectangle does two things a chef knife should never do: it scrapes a board clean without dragging an edge across wood, and it lifts a pile of diced onion in one motion instead of three passes with a blade you then have to wipe. Bakers buy it to divide dough; cooks who own one end up reaching for it every single prep because carrying food on the flat of a knife is how you dull the knife and drop the onion.

- Clearing a board, portioning dough, and scraping down a floured bench.
- Not for
- Cutting anything that needs an edge — a scraper is blunt on purpose and will crush a tomato rather than slice it.
