Why this shape

The Professional is built on a polyurethane rocker outsole that pushes the foot forward through the gait cycle so a cook rolling between stations does not land flat-footed on tile, and the single-density open-cell PU footbed absorbs impact that would otherwise travel up the shin on a concrete floor. The box-leather upper is the Dansko answer to a wet kitchen — smooth, clean-finished, and wiped down with a damp soapy cloth when stock spills, where suede or canvas would stain and stay stained. A 2-inch heel and 0.8-inch platform put a working cook at a slight forward lean that matches a counter without forcing the lower back to hold a posterior tilt all day, and the heel counter is loose by design — the heel lifts and lowers freely while the rest of the foot stays put, which is what makes the shoe function as a clog.

Good for: Line cooks on tile and concrete, banquet chefs on their feet through plating, pastry stations where you stand in one place for hours, anyone whose lower back tells them when a service ran long.
Not for: Greasy line where a slick-resisted outsole matters more than rocker geometry — the PU outsole is real but it is not the tread Shoes for Crews or Crocs Bistro put on a kitchen floor. Reach for those at a fryer station.
