Why this shape
Cast iron holds heat evenly across a flat disc where a thin steel pan would cool the moment the dough lands, so a raw pupusa crisps instead of steaming. The cooking surface is lightly raised at the edge so a thin film of oil pools rather than running off, and the long handle reaches across a burner with the hand well to the side.
- Good for
- Tortillas, pupusas, quesadillas, arepas, pancakes, chapati, and any flatbread that wants a hot, even disc instead of a curved pan.
- Not for
- Wet braises or simmering sauces: a flat disc has no wall, so liquid runs straight off the edge onto the burner.
- Care
- Hand wash, dry, and oil — the manufacturer's own use-and-care instruction, verbatim. Never soak, never the dishwasher. A thin coat of oil after each wash keeps the factory seasoning going.
