Why this shape
Cast iron holds heat evenly across the flat disc where a thin steel pan would cool the moment the dough lands, so a raw pupusa crisps instead of steaming. The cooking surface is flat across ten and a half inches with a slight raised edge so a film of oil pools rather than runs off, and the long handle reaches across a burner with the hand well to the side. Victoria casts this in Colombia from recycled iron and seasons it in flaxseed oil, so the surface is ready to cook out of the box and the seasoning only darkens from there.
- Good for
- Tortillas, pupusas, quesadillas, arepas, pancakes, roti, grilled cheese, and any flatbread that wants a hot, even disc instead of a curved pan.
- Not for
- Wet braises or simmering sauces: a flat disc has no wall, so liquid runs off the edge onto the burner. Reach for a skillet or saucier instead.
- Care
- Hand wash only with warm water — no soap. Dry completely, apply a light coat of oil before storing. Not dishwasher safe. The manufacturer publishes this verbatim on the product page.
