Why this shape

Bare seasoned iron is the version to buy first: it arrives ready to cook, the surface improves every time you use it, and there is no enamel to chip when it knocks the oven rack. Five quarts is the size that fits a chicken, a shoulder or a boule without crowding the lid. Lodge ships it seasoned from the foundry, which is the difference between a pot you cook in tonight and a pot you have to prepare first.

Good for
Soups, roasts, braises and sourdough bakes — the pot that earns its shelf every week.
Not for
Long acidic simmers on a young surface — tomato and wine strip a fresh seasoning before it has built.
Care
Hand wash warm, dry on the heat and wipe a thin film of oil inside. Never leave it wet; bare iron rusts where enamel would not.
