Why this shape
The blade is thin and angled so its front edge gets under food before the food knows it moved, and the slots let fat drain instead of riding along. Silicone is the deliberate choice over bare metal: it does the same lift on a coated or enamelled surface without scratching it, which is what makes one spatula work across every pan in a kitchen rather than only the raw iron.
- Good for
- Fish, eggs, pancakes, scallops and anything that breaks if you turn it twice.
- Not for
- Scraping fond off a hot pan — a flexible silicone edge will not lift what a steel bench scraper will.
- Care
- Wash after use and check the edge for nicks; a cut silicone lip stops sliding cleanly.
