Why this shape
Designed with Anne-Sophie Pic, a three-Michelin-star chef, together with Verdier Cutlery and the studio C+B Lefebvre. The camber and the flex of the blade were the specific things they worked on: enough spring to slide under something soft and lift it whole, enough backbone that it does not fold under the weight. The offset keeps your knuckles off the plate.

- Small or cut pieces — foie gras, appetizers, scallops, petits fours — and anything cooked on a teppanyaki or plancha.
- Not for
- Turning a whole fish or a steak — this is a placement tool, not a turner.
