Why this shape
Developed with Mathieu Blandin, the 2013 World Pastry Champion. Two details separate it from a bent strip of steel: the outer welding is made to survive temperature shock, so it goes from blast chiller to oven without the seam opening, and the size is engraved permanently rather than printed — the marking is still legible after years of washing.

- Long plated components, entremets and frozen preparations — freezer, deep freezer, refrigerator, blast chiller or oven.
- Not for
- Liquid preparations — the maker states explicitly that it is not suitable for them.
