Why this shape

Chef Gray Kunz had this shape made because service spoons were the wrong tool for saucing: the bowl here holds about two tablespoons, enough for one plate, and its shallow front edge lets the sauce leave in a controlled line instead of a dump. Heavy 18/10 stainless means it does not flex when you drag it, so the line you drew is the line that lands.

Good for
Saucing plates at the pass, portioning, basting, and tasting — the one spoon most line cooks carry.
Not for
Draining or lifting solids out of liquid — the bowl is solid. Take the perforated or slotted version for that.
Care
Hand-wash only, as the maker states. Brushed handle finish.
