Why this shape
Chef Gray Kunz had this shape made because service spoons were the wrong tool for saucing: the bowl here holds about two tablespoons, enough for one plate, and its shallow front edge lets the sauce leave in a controlled line instead of a dump. Heavy 18/10 stainless means it does not flex when you drag it, so the line you drew is the line that lands.

- Saucing plates at the pass, portioning, basting, and tasting — the one spoon most line cooks carry.
- Not for
- Draining or lifting solids out of liquid — the bowl is solid. Take the perforated or slotted version for that.
