Why this shape
Superfine mesh is the fragile part of any chinois — push a ladle into it hard enough to force a sauce through and a cheap one deforms at the rim. This one carries a one-inch metal band over the mesh, and the handle and that band are bolted through the frame rather than spot-welded, which is the joint that normally fails first.
- Good for
- Finishing sauces, stocks, purées and custards before they go to the plate.
- Not for
- Draining pasta or washing greens — the fine mesh clogs and is slow to clear.
- Care
- Tinned steel: dry it immediately and store dry. Tin does not tolerate long soaking.
