Why this shape
Cast iron is the reason to choose this over a thin-walled pot: it holds temperature through a stir, so a sauce does not scorch the moment you turn your back on it, and it moves from stove to oven to fire without a second thought. Victoria pre-seasons with flaxseed oil and publishes it PTFE and PFOA free, so the cooking surface is the iron itself and improves with use. Dual pour spouts and a long handle are the practical part — a saucepan you cannot pour from cleanly is a saucepan that lives in the sink.
