Why this shape
Carbon steel does what cast iron does — holds heat, takes a seasoning, develops a nonstick surface over years — at roughly a third of the weight per inch of diameter, and Misen pours a two-millimeter-thick body that is thin enough to heat quickly on a home burner and thick enough to hold the heat through a sear rather than drop the moment a cold steak lands. The pan comes pre-seasoned with corn oil so a home cook opens the box and cooks a fish fillet the same night; the patina then darkens with each use until the surface is as slick as a decade-old wok. The eight-inch diameter fits two chicken thighs, a single solid sear on a steak, or three eggs across the bottom, and the long metal handle stays cool enough on a home burner that the cook picks the pan up bare-handed for a stovetop-to-oven move.
