Why this shape
Cast iron holds enough heat that a cold steak dropped into a hot, dry pan does not kill the sear — it stays above the Maillard threshold long enough for a proper crust. The cooking surface is 10.25 inches across and the wall is two inches high, so it fries shallow and bakes shallow without the food swimming, and the long handle reaches to the back of the oven with the hand well clear of the rack.
- Good for
- Steak, chops, chicken parts, cornbread, skillet pizza, shallow frying, and any task that demands holding heat through the cook.
- Not for
- Delicate sauces that need quick response: cast iron is a heat reservoir, not a heat throttle, so it does not cool down when you turn the burner down.
- Care
- Hand wash, dry, oil — the manufacturer's own use-and-care instruction, verbatim. Never soak, never the dishwasher. Re-oil lightly after each wash and the seasoning keeps darkening.
