Why this shape

A chef skillet has flared, curved sides instead of the straight walls of a standard fry pan, and that curve is what lets you toss and turn food rather than push it around a corner. Smithey machines the interior to a satin-smooth finish rather than leaving the pebbled sand-cast texture — a polished surface takes seasoning into a flatter, more even layer, which is why these release like an old family pan from the first month instead of the third year. Care
