Why this shape
Size is the whole argument. Crowd a 10-inch pan with four cutlets and the surface temperature crashes, the meat releases water and you braise instead of sear. Twelve inches keeps enough hot iron between the pieces for a real crust. Stargazer puts this at roughly a vintage number 10, which is the size most old family skillets actually were, and offers it seasoned or bare so you can start from their surface or build your own from raw metal.

- Family-size cooking, three to four steaks or cutlets at once, a whole head of cauliflower, big roasts.
- Not for
- A small burner — a 12-inch base overhangs a compact hob and will heat unevenly through the rim.
- Care
- Hand wash warm, dry on the burner, oil thinly while warm. If you take the bare version, season it before the first cook.
