Why this shape
Tongs are the hand you put into heat, so the two things that matter are how far the tips close and how much the arms flex. Scalloped stainless tips grip a hot piece without piercing it — no juice lost the way a fork loses it — and enough spring in the arms lets you set something down gently instead of dropping it the last inch. This is the pair a cook reaches for without looking, which is the whole test for a tong.
