Why this shape
Most edges do not need a full progression — they need one middle grit and a finish. 3000 is that middle: coarse enough to wake a tired edge, fine enough that you are not undoing work. The 8000 side is where the edge stops being sharp and starts being frightening. Seido publishes it as building slurry readily and staying flat a long time, which are the two things that separate a stone you enjoy using from one you fight.
- Good for
- Maintenance between full sharpenings, finishing after a coarser stone, and anyone who already owns a 1000.
- Not for
- A first stone — start on a 1000 combination. These grits polish faster than they cut, and a truly dull edge will take all afternoon.
- Care
- Soak it, keep it flat, and never use oil on a waterstone. Rinse the slurry off before it dries hard on the surface.
